My grandfather’s favorite snack was a bowl of cippolini cooked tender with a little sugar and vinegar. They are hard work in terms of prep but worth the taste. A shortcut for peeling them? There isn’t one. It helps to soak them in warm water for a few minutes before peeling to loosen their skins. When you peel them, try to avoid cutting away a lot (too much of the onion). I make an incision from top to bottom with a paring knife and peel the onion from its cozy jacket with my fingers.
